Made it without eggs or oil
I am inherently a lazy baker so when I saw this vanilla mix, I thought yeah, I’d like to try it but I don’t do eggs or extra oil for health reasons. Okay, so I got it, the mix smelled great and then I made my adjustments, expecting El Floppo because that’s what typically happens when I keep eggs out of a recipe (even if adding Egg Replacer). So my adjustments were: 3/4 cups of soy milk, 1/2 cup plus more if needed of boiling hot water, 1/4 cup unsweetened applesauce, a squeeze of lemon and a cup of blueberries. Absolutely no oil.I mixed the wets well in one 9 inch round pan. I then added the dry mix. I kept adding hot water until I got a good consistency. This is hard to explain, but a little thinner than a thick creamy soup. If you have a trained cake eye, that will help. I let the batter sit for five minutes. I then stirred in the blue berries and put that one 9 inch round pan in the preheated oven (a toaster oven). It rose beautifully with a nice golden mound. What? Huh? Tasted great, a little bit too sweet for my taste, but the acid and blueberries help balance it out a bit. So either the Baking Elves were with me that day or this is a great mix for make some adjustments! If only I could reduce that sugar, but we all know that sugar is part of structure in a cake. I’ll def be buying this again for that one pan cake.

    Versatile!
I used around half box, and I added some almond extract to the mix. I also used the Happy Belly avocado oil. And I put some sliced almonds on top, before baking. Also from the Happy Belly brand. The cake rose beautifully, and the almonds were perfect. After that I added some “tea”, made of more almond extract and a little bit of manuka honey. And because the cake was hot, the result was absolutely amazing. Like a mini birthday cake. It was perfectly moist. I used an 8” round mold. The next day… still amazing. The best time to add the liquid is when the cake is hot. Definitely a good kitchen staple, with better quality and ingredients from other brands. Thanks Amazon 🙏🏼!

    Yummy.
Who uses vegetable oil anymore? I substituted with olive oil. Added strong black coffee in lieu of plain water and got an awesome strong chocolatey brownie cake. So delicious. Highly recommend.

    Good Flavor
To use a 9×13″ pan, reduce cooking time to 22 minutes. Used quick chocolate sheet cake to underlay strawberries and whipped cream. (Yum.)

    I was amazed
I was amazed at hoe chocolatey this cake tasted. I could have sworn it had Ghiardelli chocolate sauce in it…. That’s how good the chocolate taste was. I added some chopped walnuts and a teaspoon of vanilla because I like these flavors. The cake was so moist that I thought it was homemade. This will be the only box cake mix I will buy from this point on.

Yellow cake mix… YAY. No GMO’S
I’m trying to stay away bioengineering and this cake mix…. Well.. takes the cake.. so much better than the leading brands. Yes it does cost a little more but to my family it is worth it. It also tastes better is a softer creamy Cake.🎂 Cooks the same as any regular cake.
