Classic Kitchari

Kitchari is a staple food in Ayurveda. It has a light, soft consistency that cleanses and nourishes the body. It is a mixture of

mung beans, rice, seasonal vegetables, and spices—a complete one-pot meal.

1. In a fine-mesh strainer, rinse the mung beans and rice under cold running water.

2. In a medium glass bowl, place the mung beans and rice and cover completely with water. Soak for 3 hours and drain.

3. In a medium pot, heat 1 tbsp ghee over medium-low heat. Add the mung beans, rice, and cinnamon and sauté for 2 to 3 minutes.

4. Add 4 cups boiling water to the pot. Cover and simmer for about 45 minutes until the beans and rice are tender.

5. In a saucepan, heat the remaining ghee over medium-low heat. Sauté mustard seeds for 2 to 3 minutes, until they begin to pop. Add ginger, cumin seeds, and fennel seeds and sauté for another 1 to 2 minutes. Add the turmeric, coriander, and salt to taste.

6. Stir the spices into the pot. Add more water as needed for a creamy consistency and texture.

7. Garnish with the cilantro, coconut, and lime.

Ingredients 1/2 cup split yellow mung beans 1/2 cup basmati rice 2 tbsp Ghee 1 cinnamon stick 1/2 tsp each mustard seeds, cumin seeds, and fennel seeds 1/2 tsp ground tumeric 1 tsp ground coriander Garnish: 1 lime wedge and 1 tsp each fresh chopped cilantro, shredded coconut

    great book
    (Wife writing this review) I absolutely love this book. The ingredients are simple, the recipes are easy to follow and understand. The forward was written so beautifully. Those two pages alone are worth the price of the book- full of wisdom, they capture the feeling of living in a busy, fast paced world- as well as how to find ourselves again. I was nervous about purchasing this book because most cookbooks are full of recipes with ingredients I’ve never even heard of and the recipes are always complicated- I opened this book and was so pleasantly surprised at how doable this will be, she breaks everything down and gives so many options for each recipe depending on the season and personal tastes- even the feel of the cover of this book is perfect- it’s a wonderfully thick, soft paperback. This book is going to be well used over the years and I plan to purchase a copy for all the women in my family and I’ve already texted the link to all of my friends. I read nearly the entire thing in one sitting- even the recipes- I actually read it all, planning out menus and taking notes….. if you clicked on the book to open this page- just go ahead and purchase it- you will love it!

    This would make a nice gift. I bought this for I wanted more recipes for my dosha. Nice book, shares info on different ailments women may go through in life and how to address them. Beautifully done!

    Pretty ok. Not what I thought.
    It’s a book. Boring intro. Too political introduction. Learn more about the value of the prayer with the herbs.Pretty pictures. But no way can one learn more about ayervedic or Hinduism.Due to political crap I wouldn’t recommend even as an introduction for a kid.Opens up citing truly UNPROVEN theories. I am not and was not impressed.My opinion. Get it if you wish. I’m not returning. This is just a review.

    Given this book addressed a complex system of health, including diet, there is a logical approach which is easy to follow. Most importantly, there are some delicious recipes! I’m working my way through the book, but so far they’ve all been great.
